Easy Vegan mushroom fajitas



Chop mushrooms into large chunks

Slice onion

Slice red bell pepper

Chop green onions (set aside they go in at the end)

Sauté the onions and bell pepper and when onions are transparent
Add the mushrooms and green onions

Season with Spanish paprika , liquid smoke , fresh garlic pepper and sea salt

Sauté that until your desired texture I personally like the mushrooms kinda firm

Add vegan cheese (I use vegan pepper jack cheese from follow your heart)


Serve with vegan sour cream And fresh guacamole

Vegan Lasagna with creamy white sauce

Okay now since I made a huge announcement , I couldn't bail out of it so then I couldn't just throw everything in a baking dish and cook it till its brown , worst comes to worst it's a hell of a veggie casserole

So basically the recipe is hella long but I promise it's worth it LOL .



Ingredients

1 Large white onion
1 red bell pepper
1 orange bell pepper
Half cup of fresh minced garlic
Two sage leafs
5-6 bail leafs
Sea salt
Garlic salt
Pepper
Half cup of flour
Almond milk
Green onion
Spinach
Tomatoes
Lasagna noodles
Olive oil






Directions

Chop red and orange bell pepper
Set them aside


In food processor ~ add one chopped white onion , half cup of minced garlic
3 sage leaves
5-6 basil leaves
Garlic salt
And two tablespoons of chopped red and orang bell pepper
Add a little water

Purée it then set it aside



2 zucchini (chopped)

1 yellow squash (chopped)

1 eggplant (chopped)

One bunch of broccoli (chopped)

Add all to bowl with the red and orange bell pepper that we set aside

Mix if all together add some olive oil and garlic salt and pepper then mix it thoroughly

Set aside agian


In medium sauce pan

Add tablespoon of minced garlic , about a half cup if chopped green onions and 3-4 chopped basil leaves and olive oil

Sauté for a minute or two

Add vegan butter about a cube

Sprinkle in about half of cup of flour

Brown that , then add 4 cups of almond milk

Add half block of vegan pepper jack cheese

I cup of vegan parmesan cheese (made with cashews)
I didn't make it I bought it


Let simmer until thick then turn off and cover


In a skillet or wok sauté the chopped veggies zucchini and stuff that we set aside in olive oil until soft
Then stir in about 6-5 cups of spinach or more if preferred.

Add chopped green onion and basil at the end sauté for about two min

Then set aside



I'm a large soup pot , boil water

Drop noodles in for 6-8 min

Then immediately drop the noodles into a large bowl of ice water


Spread out paper towels

Take each noodle out of the ice water lay it flat on the paper towels

Then dab the top with a large wod of paper towels


Spread noodles to cover bottom of glass baking dish

Spread some white sauce (thin layer)
Scoop some sautéed veggie mix spread it to cover then add grated vegan pepper jack cheese then top with noodle layer Then repeat two to three more times then top with cheese


After its on a plate you want to sauté chopped onion , tomato , olive oil garlic salt and pepper

For about two minutes then top each plate with the garnish :)

This is my first time making it and


YES I ROCKED THAT SHIT!!!












Vegan French bread pizza

French bread pizza with vegan cheese


Boil broccoli and cauliflower until soft

Chop garlic, purple onion and green bell pepper one of each or more if you prefer.

Mash veggies up toss in sautéed onion bell pepper and garlic , mix all together well.


Spread it on French bread

Lay vegan cheese slices on top
Spread sliced olives


And bake for 20-30 minutes on 400

Slice serve and enjoy.

Add water ,ice and organic

Blend and enjoy

6 pieces of dandelion

The water from two coconuts

And a bunch of wheat grass

Blend with ice and two to three tablespoons of date sugar And enjoy

Green banana smoothie

5 organic bananas
The water from 2 coconuts
A small bunch of kale
And a small bunch of dandelion

Add ice two table spoons of organic date sugar blend and enjoy

Veggie sandwich so good !

Simple salad wraps

Simple prep salad wraps


Chop two kinds of lettuce iceberg and romaine
Chop two tomatoes
Chip purple onion
Chop cucumber
Chop green onions
Chop avocado

Spread tortilla down spread vegan cream cheese

Spread salad and vegan ranch (or whatever dressing your prefer)


Wrap , slice and enjoy

Store in a container with a lid and have them in the fridge ready to grab.

Vegan eggrolls

Bad news ..... I messed up the Chinese food. Good news is ...... I may have invented the best Chinese food roll lol.

I sautéed all the chow mein , rice Kung pao , and sweet and sour sauce and added it to the eggroll stuffing mix I made and fried the egg roll.

So two of them are a serving size.



Take chow mein and rice stir together

Add sweet and sour sauce just a spoon full sauté all together

Add egg roll stuffing and

Lay down egg roll wrap
Spread stuffing

Wrap fry and enjoy with your choice of sauce

Vegan BBQ tofu wraps

Fry or grill tofu strips (I fry them in gluten free flour ) then sauté the BBQ sauce on at last minute.

Lay down gluten free tortilla
Spread vegan cream cheese

Add salad (romaine lettuce ,cucumber ,tomatoes , purple onion ,avocado, and green onions )

Add BBQ tofu strips

Add vegan ranch

Wrap ,slice , serve and enjoy.

Cook black eyes peas with garlic , onion,garlic salt and pepper

Drain add to big mixing bowl

Chop egg plant into small pieces

Chop purple onion into small pieces

Chop portabella mushrooms into small pieces

Chop broccoli into small pieces

Sauté everything in seasoned olive oil (fresh garlic and pepper)

Until everything is soft


In mixing bowl smash drained black eyed peas with potato masher

Add sautéed veggies

And seasoning

Ad bread crumbs and cap or two of olive oil

Grill until crispy on the outside

Serve with lettuce ,purple onion ,tomato ,fresh ripe avocado

Add spicy vegan avocado mayonnaise

And enjoy

Marinate the mushroom caps

Slice onion and garlic and green onion
Add mushroom caps to container add Worcestershire sauce

Let marinade for a few hours or overnight whatever you prefer.

Place in frying pan with olive oil (I season my olive oil with fresh garlic)

Grill until both sides are grilled really good

While they are cooking :

Make the mayonnaise

1 cup of vegan mayo

1 whole avocado

Cayenne pepper (to your taste )

Squeeze lime in so avocado don't turn brown

Use hand mixer and mix until smoothie
Set that aside

Slice avocado
Purple onion
Tomato
Lettuce

When mushrooms are almost done
Add vegan cheese (the underside of the mushroom)

Grill the onions and tomato in the pan next to the mushrooms

When finished top the mushroom with the tomato , grilled onions , and green onions


Then make your burger and enjoy

Tip: use a lot of spicy avocado mayo for better taste

1 orange
1 lemon
the water from 2 coconuts

your choice of sweetener ( i use dates)

blend with ice and enjoy.

Sushi rice~

Rinse rice really good until all starch is gone then let soak for 30 minutes then rinse really good again.

Cool rice as you normally would
When rice is done scoop into wood bowl if u got one using a wood spoon is best.

Lay seaweed wrap on plate
Spread rice on half
Spread light coat of hot vegan mayonnaise (1/2 cup of veganaise add desired amount of cayenne pepper depending on how spicy you want it and black pepper )

Lay across some avocado
Lay across sliced cucumber
Romaine lettuce


Roll and at the end of the wrap sprinkle water to seal it closed firmly

Slice and enjoy will soy sauce or whatever you want.

Add spinach

Chop into cubes two blocks of vegan cheese

Place everything into a baking dish add water about two cups

Season with garlic salt and pepper

Cover with foil bake on 450 for and hour and half or two until everything is soft

And enjoy top with vegan sour cream :)

And some shavings from the inside of the coconut

Add a date or two or your own sweetener add ice some water blend and enjoy

Potatoes with vegan cheese

Chop potatoes
Chop onions and cilantro

Add some olive oil To frying pan

Throw the onions and potatoes in until they are just how you want them add garlic salt and pepper or whatever other seasonings you like add the cilantro at the end and just sauté that for a few Minutes

Add vegan cheese put in the microwave for 30 seconds to melt the cheese

Add non dairy sour cream and enjoy!

I only have potatoes on occasion but when I do they are hooked up to the max lol

Add it to a pot with hominy ,chilli powder, garlic salt ,sea salt, pepper and cayenne pepper boil until you like the taste ;) add more of what seasonings you would like


Then garnish with chopped white onion and cilantro add crystals Louisiana hot sauce top with non dairy vegan sour cream and eat with spoon or tortillas or toast of your choice.

TIP: I had mine with a banana on the side just to eat but my kids added banana to theirs. So try it the way you prefer :)

TIP: you can freeze your fruit first and you will need less ice.

1/2 of a coconut milk yogurt non dairy coconut milk or almond milk

Add three tablespoons of organic homemade applesauce

Mix it all together and enjoy

Spread non dairy coconut milk yogurt and stack another slice and repeat and enjoy

Preaches are not in season but I wanted some so I used frozen ( I rarely use frozen)

2 cups of peaches

1 inch thick slice of pineapple

1 whole mango

2 oranges

1 lemon

And the water of 2 coconuts


Blend with ice and for sweetener I use 1/2 cup of organic sugar (makes a whole blender full)

Chop up two red bell pepper
Chop up two purple onions
Chop up about 4-5 garlic cloves
Two tomatoes
Sauté everything with olive oil
Add tomatoes last

Chop your vegan cheese into small squares

Place them in the fondue pot add I cap full of olive oil

Add the sautéed onions and tomatoes and peppers let it sit while
Stirring really good until you start to smell the aroma

Cut sour doe bread into tiny squares toast to your preference I personally like mine really toasted.

TIP: I eat this on like a cheat day so I get to have bread being that I don't eat bread a lot but its also great with steamed broccoli, cauliflower and zucchini and I'm sure any veggies you like
