Simple prep salad wraps


Chop two kinds of lettuce iceberg and romaine
Chop two tomatoes
Chip purple onion
Chop cucumber
Chop green onions
Chop avocado

Spread tortilla down spread vegan cream cheese

Spread salad and vegan ranch (or whatever dressing your prefer)


Wrap , slice and enjoy

Store in a container with a lid and have them in the fridge ready to grab.

Vegan eggrolls

Bad news ..... I messed up the Chinese food. Good news is ...... I may have invented the best Chinese food roll lol.

I sautéed all the chow mein , rice Kung pao , and sweet and sour sauce and added it to the eggroll stuffing mix I made and fried the egg roll.

So two of them are a serving size.



Take chow mein and rice stir together

Add sweet and sour sauce just a spoon full sauté all together

Add egg roll stuffing and

Lay down egg roll wrap
Spread stuffing

Wrap fry and enjoy with your choice of sauce

Vegan BBQ tofu wraps

BBQ tofu wraps


Fry or grill tofu strips (I fry them in gluten free flour ) then sauté the BBQ sauce on at last minute.

Lay down gluten free tortilla
Spread vegan cream cheese

Add salad (romaine lettuce ,cucumber ,tomatoes , purple onion ,avocado, and green onions )

Add BBQ tofu strips

Add vegan ranch

Wrap ,slice , serve and enjoy.

Vegan black eyed pea burger

Vegan black eyed pea burger


Cook black eyes peas with garlic , onion,garlic salt and pepper

Drain add to big mixing bowl

Chop egg plant into small pieces

Chop purple onion into small pieces

Chop portabella mushrooms into small pieces

Chop broccoli into small pieces

Sauté everything in seasoned olive oil (fresh garlic and pepper)

Until everything is soft


In mixing bowl smash drained black eyed peas with potato masher

Add sautéed veggies

And seasoning

Ad bread crumbs and cap or two of olive oil

Grill until crispy on the outside

Serve with lettuce ,purple onion ,tomato ,fresh ripe avocado

Add spicy vegan avocado mayonnaise

And enjoy

Marinate the mushroom caps

Slice onion and garlic and green onion
Add mushroom caps to container add Worcestershire sauce

Let marinade for a few hours or overnight whatever you prefer.

Place in frying pan with olive oil (I season my olive oil with fresh garlic)

Grill until both sides are grilled really good

While they are cooking :

Make the mayonnaise

1 cup of vegan mayo

1 whole avocado

Cayenne pepper (to your taste )

Squeeze lime in so avocado don't turn brown

Use hand mixer and mix until smoothie
Set that aside

Slice avocado
Purple onion
Tomato
Lettuce

When mushrooms are almost done
Add vegan cheese (the underside of the mushroom)

Grill the onions and tomato in the pan next to the mushrooms

When finished top the mushroom with the tomato , grilled onions , and green onions


Then make your burger and enjoy

Tip: use a lot of spicy avocado mayo for better taste
