Hot spinach artichoke dip (all cheese vegan versions)

What you need

Cream cheese (vegan)
Parmesan cheese (vegan)
Pepper jack cheese (vegan)
Sour cream (vegan)
Onion 
Artichoke hearts 
A whole clove of garlic 
One tomato 



First think you do is slice the top off the garlic place it in some foil put butter right on top and then close the foil nice and tight and put it in the oven let it roast about 30-40 min 

Put spinach on to cook



Combine 

2 cups of cream cheese 
1 cup of sour cream 
Grade some pepper jack cheese (to your taste) 
Sprinkle some Parmesan (to your taste)  


Mix it together thoroughly 


Chop artichoke hearts set aside 
Dice two onions dice one tomato 

Sauté the onions and red bell pepper 
Add garlic salt 


When onions are almost done toss in the artichoke hearts and tomato sauté them for a min or two then 

Stir them into the cheese mix also adding spinach 
Take garlic out of foil and squeeze  the now soft roasted garlic into the mix and mix and add Parmesan and pepper jack cheese until it's how you want it to taste 

Eat with tortilla chips, French bread , sour dough bread or whatever you choose.
